Hello [[contact.first_name]],
Next week at Ragna’s Table, we move from the comforting warmth of traditional Mexican home cooking to the hearty, slow-cooked flavors of New England—two meals rooted in nourishment, simplicity, and deeply satisfying comfort food.
Tuesday, June 2nd brings a Comforting Mexican Tamale Soup with Cheesy Pan de Queso. This vegetarian and gluten-free soup is inspired by the rich flavors traditionally found in tamales, with masa harina, vegetables, tomatoes, chiles, beans, and warming spices slowly coming together into a hearty, comforting bowl. Served alongside is cheesy pan de queso, adding warmth and savory richness to the meal. Tuesday’s meal includes a complimentary
surprise dessert, and a 9-inch organic seeded sourdough bread loaf is available separately for those who would like to add it to their table.
Thursday, June 4th brings United States New England–Style Baked Beans with Smoky BBQ Tomato Sauce and Chicken Meatballs, served with cabbage slaw and a soft roll. Slow-cooked baked beans are layered with smoky tomato flavor and paired with tender chicken meatballs for a meal that feels hearty and comforting without being overly heavy. Fresh cabbage slaw adds brightness and crunch, balancing the richness of the beans and sauce. A
vegetarian option is also available upon request. Thursday’s dinner also includes a complimentary surprise dessert.
I can’t wait to cook for you.
Warmly, Ragna ❤️

Comforting Mexican Tamale Soup with Cheesy Pan de Queso – Vegetarian & Gluten-Free (includes complimentary surprise dessert)
|
Immerse yourself in the vibrant, heartwarming flavors of Mexican home cooking with this Comforting Mexican Tamale Soup with Cheesy Pan de Queso, a dish designed to be both satisfying and nourishing. Hearty black beans, sweet corn, tender vegetables, and a fragrant blend of spices simmer gently in a lightly seasoned vegetable broth, while soft, masa-based tamale dumplings float on top, adding a pillowy, comforting texture. The soup is delicately savory with layered flavors that evoke
the warmth and hospitality of a traditional Mexican kitchen.
Each bowl delivers a thoughtful balance of nutrition and flavor: black beans provide plant-based protein, fiber, and iron to support energy and digestive health; corn contributes antioxidants, B vitamins, and natural sweetness; and fresh vegetables offer vitamins, minerals, and antioxidants to nourish the body. Masa dumplings, made from corn masa, provide slow-digesting carbohydrates and a subtle corn flavor, rounding out the dish with heartiness and texture.
Accompanying the soup are warm, golden gluten-free Pan de Queso rolls, soft and cheesy with a tender crumb perfect for dipping into the savory broth. Tapioca flour lends a light, slightly chewy texture while supporting gluten-free baking; a mix of mozzarella and sharp cheese adds creamy richness and depth of flavor; and a touch of butter enhances the aroma and warmth, creating a rustic, comforting complement to each spoonful of soup.
This meal invites a cozy, restorative dining experience, where the aromatic vegetarian Tamale Soup and tender, cheesy gluten-free Pan de Queso rolls come together to celebrate the simple, nourishing pleasures of Mexican home cooking. Every bite has been crafted to delight both palate and spirit, offering warmth, texture, and mindful enjoyment in each serving.
I can’t wait to cook this for you!

United States: New England–Style Baked Beans with Smoky BBQ Tomato Sauce and Chicken Meatballs, Cabbage Slaw & Soft Roll (Vegetarian Upon Request) (includes complimentary surprise dessert)

United States cooking has long been shaped by regional traditions of slow ovens, preserved pantry staples, and the transformation of simple ingredients into deeply comforting meals. This dish draws from that lineage, centered on heirloom Good Mother Stallard beans—an old-world variety prized for their distinctive mottled appearance, creamy texture, and rich, nutty flavor that holds its shape beautifully through long, slow cooking. Unlike standard
commercial beans, these heirloom legumes bring a deeper, more complex earthiness and a naturally creamy interior that becomes the backbone of the dish.
At the heart of the meal are the Good Mother Stallard beans, slowly simmered with onion, garlic, and bay leaf until tender, then folded into a smoky BBQ-style tomato sauce built from tomatoes, mustard, vinegar, and spices. This sauce reflects classic American barbecue traditions, where sweet, tangy, and smoky elements are balanced to create depth without heaviness. Smoked paprika adds warmth and aroma, while the slow oven finish allows the
beans to absorb the sauce fully, developing a glossy, cohesive texture.
Tender meatballs made with organic chicken legs, freshly ground in-house, are added for richness and protein. Their higher fat content keeps them especially juicy and flavorful as they bake gently in the sauce, absorbing the smoky-sweet flavors while adding savory depth to the dish. For vegetarian guests, the dish is also served without meatballs, allowing the heirloom beans and BBQ-style sauce to stand fully on their own as a complete
plant-based option.
Alongside, a crisp cabbage slaw brings essential contrast. Finely shredded cabbage, fresh herbs, and a sharp vinegar-based dressing provide brightness, crunch, and acidity that cut through the richness of the beans and restore balance to the palate. This fresh element reflects a central principle of American home cooking: that slow, rich dishes are best supported by something sharp and raw to keep the meal lively.
A soft roll is served warm on the side, offering a tender, buttery base for soaking up the sauce. Its mild flavor and pillowy texture makes it an ideal companion, rounding out the meal with comfort and familiarity.
Together, this dish reflects the spirit of American farmhouse cooking—rooted in heirloom ingredients, slow preparation, and the balance of richness with freshness. The heirloom beans provide identity and depth, the BBQ-style sauce brings warmth and smoke, and the slaw and rollscomplete the plate with contrast and comfort.

Kataifi Portokalopita is a Greek orange custard pastry made with buttery strands of shredded kataifi dough baked beneath a fragrant orange custard infused with fresh juice and zest. As it bakes, the custard settles into the toasted pastry, creating a texture that is soft, luscious, and lightly layered throughout. Once finished, the pastry is soaked with a bright citrus syrup that gives it its signature silky texture and deep orange flavor. The result is
a dessert that feels rich yet vibrant, balancing creamy custard, delicate pastry, and fresh citrus in every bite.

Iyengar Bakery Honey Cake
|
This cake is a nostalgic South Indian bakery classic known for its soft, eggless sponge and delicate layers of sweetness. The cake is lightly soaked with a honey-infused syrup that keeps each bite moist and fragrant, then finished with a thin layer of fruit jam and a coating of coconut. Gentle notes of honey and vanilla give the cake warmth and softness, while the coconut adds light texture and sweetness. Simple, comforting, and quietly celebratory, it
reflects the style of the beloved Iyengar bakeries that shaped generations of Indian tea-time treats.

In the Netherlands, few pastries are as beloved as the Bossche Bollen — a classic treat from the city of ’s-Hertogenbosch known for its airy choux pastry, lightly sweetened whipped cream filling, and rich dark chocolate topping. These mini Bossche Bolletjes capture all the flavor and nostalgia of the traditional version in a smaller, bite-sized form that feels both elegant and comforting. This menu is also inspired by our upcoming summer visit to the Netherlands. My friend Bernd, whom I’ve known for more than 30 years, lives with his family in Den Bosch, and we’re looking forward to visiting them in July, and visiting Den Bosch for the first time ourselves. Each pastry is filled with soft vanilla-kissed whipped cream and finished with dark chocolate, creating the perfect balance between lightness and richness. The delicate choux shell gives way to a cool, creamy center, while the chocolate adds just enough bitterness to balance the sweetness beautifully.
