Tuesday, May 19th brings a Greek Vegetarian Fasolada with Olive Oil Herb Flatbread. Creamy beans, tomatoes, carrots, celery, onion, garlic, and herbs are slowly simmered in an olive oil–rich broth until deeply comforting and full of flavor. Served alongside is an olive oil herb flatbread that adds warmth and savory depth to the meal. Tuesday’s meal includes a complimentary surprise dessert, and a 9-inch organic seeded sourdough bread loaf is available separately for those who would like to add it to their table.


Thursday, May 21st brings Herb Crusted Pork Ribs with Creamy Cabbage Slaw and Fresh Summer Tomatoes & Feta Salad. The ribs are coated with herbs and roasted until tender, creating a savory, deeply satisfying centerpiece. Alongside them is a creamy cabbage slaw for freshness and crunch, plus a tomato and feta salad that brings brightness and balance to the plate. Thursday’s dinner also includes a complimentary surprise dessert.

Greek home cooking has a beautiful way of transforming simple pantry ingredients into something deeply comforting and nourishing. Rooted in generosity and simplicity, it is a cuisine where beans, olive oil, herbs, and lemon are given time and care, allowing humble ingredients to become rich with flavor and warmth.


At the center of this meal is a Greek Vegetarian Fasolada, made with creamy heirloom Yellow Eye beans slowly simmered with olive oil, tomatoes, onions, carrots, celery, and herbs until the broth becomes silky and rich. Often considered one of Greece’s most beloved everyday dishes, fasolada is traditional village cooking at its finest—simple ingredients slowly cooked into something satisfying, hearty, and full of character.


The Yellow Eye beans become tender as they simmer, naturally thickening the broth while absorbing the flavors of the olive oil, aromatics, and herbs. Generous amounts of extra virgin olive oil give the soup its signature richness and velvety finish, while lemon added at the end brings brightness and balance to every spoonful.


Alongside the soup is an Olive Oil Herb Flatbread, baked until golden with crisp edges and a soft interior. This menu is also inspired by our upcoming summer visit to the Netherlands. My friend Bernd, whom I’ve known for more than 30 years, lives with his family in Den Bosch, and we’re looking forward to visiting them in July, and visiting Den Bosch for the first time ourselves.

Each pastry is filled with soft vanilla-kissed whipped cream and finished with dark chocolate, creating the perfect balance between lightness and richness. The delicate choux shell gives way to a cool, creamy center, while the chocolate adds just enough bitterness to balance the sweetness beautifully.
